Preheat oven to 375.
Just toss this all in a bowl:
- 1 cup all purpose flour
- 3/4 cup whole wheat flour (adds a great flavor)
- 2 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 2 teaspoons pumpkin pie spice. (I keep a jar of homemade around all year.)
- 1 beaten egg
- 1/4 cup vegetable oil
- 1/4 cup milk
- 1 cup canned/pureed pumpkin
- (Optional) 1/2 cup chopped pecans
Divide among a 12-well muffin pan that has been lightly greased or lined with paper liners.
Bake for 16-20 minutes.
